Slow Cooker Cowboy Casserole

Ingredients
  

1 lb ground beef

1 lb potatoes, diced (about 4 medium potatoes)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

1 onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup beef broth

1/2 cup sour cream

Salt and pepper, to taste

Chopped green onions and jalapeños, for garnish (optional)

Instructions
 

Brown the Beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then stir in chopped onion and minced garlic. Cook for an additional 2-3 minutes, or until the onion is translucent.

    Layer Ingredients in Slow Cooker: In the slow cooker, layer the diced potatoes on the bottom. Add the cooked beef mixture on top. Follow with the black beans, corn, diced tomatoes with their juices, taco seasoning, beef broth, sour cream, and a pinch of salt and pepper.

      Cook on Low: Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours, until the potatoes are tender.

        Add Cheese: About 30 minutes before serving, sprinkle the shredded cheddar cheese on top. Re-cover and allow the cheese to melt.

          Serve: Stir the casserole gently to combine before serving. Garnish with chopped green onions and jalapeños if desired. Enjoy a hearty bowl of Cowboy Casserole!
