1 lb ground beef (or turkey)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 can (16 oz) corn, drained

1 medium onion, diced

2 cloves garlic, minced

2 cups frozen mixed bell peppers

1 packet (1 oz) taco seasoning

2 cups shredded cheddar cheese

1 cup tortilla chips, crushed

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Prepare the Ingredients: Begin by browning the ground beef (or turkey) in a skillet over medium heat. Drain any excess fat and set aside.

    Combine in the Slow Cooker: In a slow cooker, combine the browned meat, black beans, diced tomatoes (with their juice), corn, diced onion, minced garlic, and mixed bell peppers. Sprinkle the taco seasoning over the mixture and stir well to combine all the ingredients. Season with salt and pepper to taste.

      Cook: Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the vegetables are tender and flavors have melded together.

        Add Cheese: About 30 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top of the casserole. Cover and let the cheese melt.

          Serve: When ready to serve, gently stir in the crushed tortilla chips for a delightful crunch. Optionally, garnish with fresh cilantro for added flavor.
