2 pounds boneless, skinless chicken thighs

4 cups chicken broth

1 cup carrots, diced

1 cup celery, diced

1 cup onion, chopped

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon onion powder

Salt and pepper to taste

2 cups frozen peas

1 can (10.5 oz) cream of chicken soup

1 cup buttermilk biscuit dough (store-bought or homemade)

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Ingredients: Begin by dicing the carrots, celery, and onion. Mince the garlic and set aside.

    Layer the Chicken: Place the chicken thighs at the bottom of your slow cooker. Season with salt, pepper, thyme, rosemary, and onion powder.

      Add the Aromatics: Pour in the chicken broth, and then add the diced carrots, celery, onion, and minced garlic over the chicken.

        Incorporate Cream: Stir in the cream of chicken soup until well combined. Make sure the chicken and veggies are submerged in the broth.

          Cook: Cover the slow cooker and set it on low for 6-8 hours or high for 4-5 hours, until the chicken is tender and shreds easily with a fork.

            Shred the Chicken: Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back to the pot.

              Add the Peas: Stir in the frozen peas and cook for an additional 10 minutes on high to thaw them.
