2 lbs boneless, skinless chicken thighs

1 cup soy sauce (low sodium)

1/2 cup honey

1/4 cup rice vinegar

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

1 bell pepper, sliced (any color)

1 onion, sliced

1 tablespoon sesame seeds (for garnish)

3 green onions, sliced (for garnish)

cooked white rice or cauliflower rice (for serving)

Instructions
 

Prepare the Sauce: In a bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil until well combined.

    Arrange the Chicken: Place the chicken thighs in the bottom of the slow cooker.

      Add Vegetables: Layer the sliced bell pepper and onion over the chicken.

        Pour the Sauce: Pour the prepared teriyaki sauce over the chicken and vegetables, making sure they are evenly coated.

          Cook: Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.

            Thicken the Sauce: About 30 minutes before serving, mix the cornstarch with water to create a slurry and then stir it into the slow cooker. This will help thicken the sauce.

              Serve: Once done, shred the chicken slightly with two forks and mix it back into the sauce. Serve over cooked white rice or cauliflower rice, and sprinkle with sesame seeds and sliced green onions for garnish.
