2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (28 oz) diced tomatoes with green chilies

1 packet taco seasoning (about 1 oz)

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 tsp cumin

1 tsp chili powder (optional for heat)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Shredded cheese (for serving)

Tortilla chips (for serving)

Instructions
 

Prepare the Chicken: Place the boneless chicken breasts at the bottom of the slow cooker.

    Add the Vegetables and Beans: Pour in the black beans, kidney beans, corn, and diced tomatoes with their juices.

      Season the Soup: Sprinkle the taco seasoning, cumin, chili powder (if using), and generously season with salt and pepper over the top.

        Add Aromatics: Spread the chopped onion and minced garlic evenly over the ingredients in the slow cooker.

          Pour in the Broth: Carefully pour the chicken broth over everything in the slow cooker.

            Mix Together: Give everything a gentle stir to combine, ensuring the chicken is well-coated with the spices.

              Cook on Low: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.

                Shred the Chicken: Once done, remove the chicken from the slow cooker, shred it using two forks, and return it to the pot. Stir to incorporate.

                  Serve: Ladle the soup into bowls and top with fresh cilantro, a dollop of sour cream, shredded cheese, and crushed tortilla chips for added crunch.
