1 lb boneless, skinless chicken breasts

1 tablespoon Cajun seasoning

3 cloves garlic, minced

1 medium onion, diced

1 bell pepper (any color), diced

1 (14 oz) can diced tomatoes with green chilies, undrained

1 cup chicken broth

1 cup heavy cream

8 oz fettuccine pasta

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken breasts with Cajun seasoning, ensuring they are evenly coated. You can either rub the seasoning in with your hands or place the chicken in a bowl and toss it with the seasoning.

    Layer the Ingredients: In the slow cooker, add the seasoned chicken breasts first. Then layer the minced garlic, diced onion, and diced bell pepper on top. Pour in the can of diced tomatoes (with juice) and the chicken broth.

      Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is cooked through and tender.

        Shred the Chicken: Once cooked, carefully remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.

          Add the Cream: Stir in the heavy cream and grated Parmesan cheese, mixing well to combine. Season with additional salt and pepper to taste.

            Cook the Pasta: In a separate pot, cook the fettuccine pasta according to package instructions until al dente. Drain and add it to the slow cooker, stirring gently to coat the pasta in the creamy sauce.

              Final Touches: Allow everything to cook together on low for another 15-20 minutes, letting the flavors meld and the pasta absorb the creamy sauce.
