2 lbs boneless, skinless chicken thighs

1/2 cup brown sugar

1/4 cup soy sauce

1/4 cup apple cider vinegar

4 cloves garlic, minced

1 tsp ground ginger

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (optional, for thickening)

Sliced green onions and sesame seeds for garnish

Instructions
 

Prepare the Sauce: In a medium bowl, whisk together the brown sugar, soy sauce, apple cider vinegar, minced garlic, ground ginger, red pepper flakes, and a pinch of salt and pepper until well combined.

    Arrange Chicken in Slow Cooker: Place the chicken thighs in the slow cooker in a single layer. Ensure they are not overcrowded for even cooking.

      Add Sauce: Pour the brown sugar garlic sauce over the chicken thighs, flipping the chicken a couple of times to ensure they are well coated.

        Cook: Cover the slow cooker with its lid and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is tender and easily pulls apart with a fork.

          Thicken the Sauce (Optional): If you prefer a thicker sauce, remove the chicken from the slow cooker and set it aside. In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the cooking liquid in the slow cooker and cook on high for an additional 10-15 minutes until thickened.

            Serve: Return the chicken to the slow cooker, spooning the thickened sauce over it. Serve hot, garnished with green onions and sesame seeds, alongside rice or steamed vegetables.
