Ingredients

1 ½ pounds flank steak, thinly sliced against the grain

4 cups broccoli florets (fresh or frozen)

½ cup low-sodium soy sauce

¼ cup beef broth

¼ cup brown sugar

2 tablespoons cornstarch

2 tablespoons sesame oil

4 cloves garlic, minced

1 teaspoon ginger, grated

1 tablespoon rice vinegar

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Cooked white rice (for serving)

Instructions

Prepare the Beef: In a medium bowl, mix the soy sauce, beef broth, brown sugar, sesame oil, garlic, ginger, and rice vinegar until well combined. Add the sliced flank steak to the mixture and toss until fully coated.

Add to Slow Cooker: Transfer the beef and sauce mixture to the slow cooker. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the beef is tender.

Thicken the Sauce: In the last 30 minutes of cooking, whisk together the cornstarch and a couple of tablespoons of water to create a slurry. Stir this into the slow cooker to thicken the sauce.

Add Broccoli: Within the final 20 minutes of cooking, add the broccoli florets on top of the beef. Re-cover and cook until the broccoli is tender but still vibrant green.

Serve: Once everything is cooked, serve the beef and broccoli over cooked white rice. Garnish with chopped green onions and a sprinkle of sesame seeds for added flavor.
