3-4 lb beef roast (chuck or brisket)

1 cup balsamic vinegar

1/2 cup beef broth

1/4 cup honey

4 garlic cloves, minced

2 medium onions, sliced

2 carrots, chopped

2 celery stalks, chopped

2 sprigs fresh rosemary (or 1 tsp dried rosemary)

2 sprigs fresh thyme (or 1 tsp dried thyme)

Salt and pepper to taste

1-2 tablespoons olive oil for searing

Sear the Beef Roast: Heat olive oil in a large skillet over medium-high heat. Season the beef roast generously with salt and pepper. Sear the roast on all sides until browned (about 4-5 minutes per side). This step enhances the flavor.
