Skillet Bang Bang Chicken Thighs

Ingredients
  

4 boneless, skinless chicken thighs

Salt and pepper, to taste

2 tablespoons olive oil

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

2 cloves garlic, minced

1 tablespoon fresh lime juice

1 teaspoon smoked paprika

1/2 teaspoon onion powder

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prep the Chicken: Season the chicken thighs generously with salt and pepper on both sides.

    Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, minced garlic, lime juice, smoked paprika, and onion powder until well combined. Set aside.

      Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs and sear for about 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the thighs are golden brown.

        Combine: Reduce the heat to low, and pour the Bang Bang sauce over the cooked chicken. Spoon the sauce over the thighs and let it simmer for an additional 2-3 minutes to warm through and allow the flavors to meld.

          Serve: Remove from heat, garnish with chopped green onions and sesame seeds. Serve immediately with steamed rice, noodles, or a fresh salad.
