Ingredients

1 cup all-purpose flour

2 large eggs

1 ½ cups milk

2 tablespoons sugar

1 teaspoon vanilla extract

2 tablespoons melted butter (plus extra for cooking)

1 cup fresh strawberries, hulled and sliced

2 tablespoons powdered sugar (for dusting)

Whipped cream (for serving, optional)

Instructions

In a mixing bowl, whisk together the flour and sugar. Make a well in the center and add the eggs.

Gradually pour in the milk and whisk until the batter is smooth and lump-free.

Stir in the vanilla extract and melted butter until well combined. Let the batter rest for about 30 minutes.

Heat a non-stick skillet over medium heat and add a small amount of melted butter to coat the pan.

Pour about ¼ cup of the batter into the pan, swirling to create a thin, even layer. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden.

Flip the crepe and cook for another 1-2 minutes on the other side. Remove from the skillet and keep warm. Repeat with the remaining batter.

To serve, place a crepe on a plate and fill it with sliced strawberries. Fold or roll the crepe, and dust with powdered sugar. Add a dollop of whipped cream on top if desired.

Enjoy your delicious Simple Strawberry Crepes!
