1 cup cottage cheese (preferably small curd)

4 large hard-boiled eggs, chopped

1/4 cup celery, finely diced

1/4 cup red onion, finely diced

1/4 cup mayonnaise (or Greek yogurt for a healthier twist)

1 tablespoon Dijon mustard

1 tablespoon fresh chives, chopped

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

Salt and pepper to taste

Begin by hard boiling the eggs. Place them in a saucepan, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let them sit for about 9-12 minutes, then transfer to an ice bath to cool.

    In a large mixing bowl, add the cottage cheese, mayonnaise (or Greek yogurt), and Dijon mustard. Mix until well combined.

      Once the eggs have cooled, peel and chop them into small pieces. Add the chopped eggs, diced celery, diced red onion, chives, and dill into the bowl with the cottage cheese mixture.

        Gently fold the ingredients together until fully combined. Be careful not to mash the eggs too much; you want some texture.

          Season the salad with salt and pepper to taste. Adjust the seasoning or add more mayo or mustard if desired.
