Ingredients

1 lb boneless, skinless chicken breasts (diced)

1 cup long-grain white rice

1 medium onion (chopped)

2 cloves garlic (minced)

2 carrots (sliced)

2 celery stalks (sliced)

6 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil

Juice of 1 lemon (optional, for brightness)

Fresh parsley (for garnish)

Instructions

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, minced garlic, carrots, and celery. Sauté for about 5-7 minutes until the onions are translucent and the vegetables begin to soften.

Cook the Chicken: Add the diced chicken breast to the pot. Cook for about 5 minutes, stirring occasionally, until the chicken starts to brown.

Add Broth and Seasonings: Pour in the chicken broth, and stir in the thyme, parsley, salt, and pepper. Bring the mixture to a boil.

Cook the Rice: Once boiling, add the rice to the soup. Reduce the heat to a simmer and cover the pot. Let it cook for about 15-20 minutes, or until the rice is tender and has absorbed most of the liquid.

Finish the Soup: If using, stir in the lemon juice for an extra layer of flavor. Taste and adjust seasoning if necessary.

Serve: Ladle the soup into bowls and garnish with fresh parsley. Enjoy your warm, comforting soup!
