4 salmon fillets (about 6 oz each)

1 pound baby potatoes, halved

1 cup green beans, trimmed

3 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the oven: Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or lightly grease it.

    Prepare the garlic butter: In a small bowl, combine the melted butter, minced garlic, lemon zest, lemon juice, oregano, smoked paprika, salt, and black pepper. Mix well.

      Roast the vegetables: On one side of the prepared sheet pan, place the halved baby potatoes. Drizzle half of the garlic butter mixture over the potatoes and toss to coat. Spread them out in a single layer. Roast in the oven for about 15 minutes.

        Add the salmon and green beans: After 15 minutes, remove the pan from the oven. Push the potatoes to one side and add the green beans and salmon fillets to the other side of the sheet pan. Drizzle the remaining garlic butter over the salmon and green beans.

          Return to the oven: Roast everything together for an additional 12-15 minutes, or until the salmon flakes easily with a fork and the vegetables are tender. The internal temperature of the salmon should reach 145°F (63°C).

            Serve: Remove the sheet pan from the oven and let it cool for a minute. Garnish with fresh chopped parsley and serve with lemon wedges on the side.
