6 large eggs

8 oz breakfast sausage (meat or plant-based), casings removed

1 cup bell peppers (red, green, or yellow), diced

1 small onion, diced

1 cup cherry tomatoes, halved

2 cups baby spinach

1/2 cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Olive oil spray

Instructions
 

Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper for easy clean-up.

    In a skillet over medium heat, cook the sausage until browned and crumbly, about 5-7 minutes. Break it up with a spatula as it cooks. Drain excess fat if necessary.

      In a large bowl, whisk the eggs, garlic powder, smoked paprika, salt, and pepper until well combined.

        Spread the cooked sausage evenly across the prepared baking sheet, followed by the diced bell peppers, onion, and cherry tomatoes.

          Pour the egg mixture over the veggies and sausage, ensuring an even distribution.

            Scatter the baby spinach and shredded cheese on top of the egg mixture.

              Lightly spray everything with olive oil to help it brown evenly.

                Bake in the preheated oven for 20-25 minutes or until the eggs are set and the top is lightly golden. You can check for doneness by inserting a toothpick in the center; it should come out clean.

                  Allow to cool for a few minutes, then slice into squares or wedges.

                    Garnish with fresh parsley if desired and serve warm.
