Sesame Hoisin Ground Chicken Lettuce Wraps

Ingredients
  

1 lb ground chicken

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

1 small onion, finely chopped

1 red bell pepper, finely chopped

1 cup water chestnuts, finely diced

3 green onions, sliced (white and green parts separated)

1/4 cup hoisin sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sriracha (optional for heat)

1 head of butter or iceberg lettuce, leaves separated and cleaned

Sesame seeds for garnish

Fresh cilantro for garnish

Instructions
 

In a large skillet, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

      Add the ground chicken to the skillet, breaking it apart with a spatula. Cook until browned and no longer pink, approximately 5-7 minutes.

        Mix in the red bell pepper and diced water chestnuts. Cook for another 3 minutes until the bell pepper is tender.

          In a small bowl, whisk together the hoisin sauce, soy sauce, rice vinegar, and sriracha (if using). Pour this sauce over the cooked chicken mixture and stir to combine thoroughly.

            Add the white parts of the green onions, cooking for an additional minute. Taste and adjust seasoning, adding more soy sauce or sriracha if desired.

              Remove from heat and let it cool slightly. To serve, spoon the chicken mixture into the center of a lettuce leaf, fold it up like a taco, and garnish with sesame seeds and fresh cilantro.
