8 oz. tri-color rotini pasta

1 cup cooked shrimp, peeled and deveined

1 cup cooked scallops, quartered

1 cup cherry tomatoes, halved

1/2 cup black olives, sliced

1/2 cup diced cucumber

1/4 cup finely chopped red onion

1/2 cup corn kernels (fresh or frozen, cooked)

1/4 cup fresh parsley, chopped

1/2 cup mayonnaise

1/4 cup Greek yogurt

2 tbsp lemon juice

1 tbsp Dijon mustard

1 tsp garlic powder

Salt and pepper, to taste

Lemon wedges, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the tri-color rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool down.

    Prepare the Seafood: If you haven't already, cook the shrimp and scallops in a skillet over medium heat until they are opaque and cooked through, roughly 3-4 minutes. Allow them to cool.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, shrimp, scallops, cherry tomatoes, black olives, cucumber, red onion, and corn. Gently toss together to mix.

        Make the Dressing: In a separate bowl, whisk together mayonnaise, Greek yogurt, lemon juice, Dijon mustard, garlic powder, salt, and pepper until smooth.

          Dress the Salad: Pour the dressing over the seafood pasta mixture and gently fold until everything is well-coated.
