Seafood Bisque

Ingredients
  

1 lb lobster tails, cooked and shells reserved

1 lb shrimp, peeled and deveined

2 tbsp olive oil

1 medium onion, diced

2 stalks celery, diced

1 medium carrot, diced

3 cloves garlic, minced

1 cup dry white wine

4 cups seafood stock (or fish stock)

1 cup heavy cream

1 tbsp tomato paste

1 tsp paprika

½ tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 bay leaf

2 tbsp fresh parsley, chopped (for garnish)

1 tbsp lemon juice

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, celery, and carrot, sautéing until the vegetables are soft and the onions are translucent, about 5-7 minutes.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the white wine to the pot, scraping the bottom to deglaze, and let it simmer until reduced by half.

        Chop the lobster meat into bite-sized pieces and add it to the pot along with the lobster shells for extra flavor. Follow with the shrimp, seafood stock, tomato paste, paprika, cayenne pepper, bay leaf, salt, and pepper.

          Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for about 20 minutes to let the flavors meld.

            Remove the lobster shells and bay leaf from the pot. Using an immersion blender, puree the soup to your desired smoothness or transfer it in batches to a blender.

              Stir in the heavy cream and lemon juice, and simmer for an additional 5 minutes. Adjust seasoning if needed.

                Serve the bisque hot, garnished with fresh parsley and additional lobster and shrimp pieces if desired.
