Ingredients

12 oz fettuccine pasta

1 lb ribeye steak (or your preferred cut)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

½ cup Gorgonzola cheese, crumbled

½ cup grated Parmesan cheese

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Fresh spinach and cherry tomatoes for added color and flavor

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Prepare the Steak: While the pasta is cooking, season both sides of the ribeye steak with salt and pepper. Heat the olive oil in a skillet over medium-high heat. Add the steak and cook for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from the skillet and let it rest for 5 minutes before slicing thinly.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Cook for about 1 minute until fragrant, then pour in the heavy cream. Stir well, and bring to a gentle simmer.

Add Cheeses: Stir in the Gorgonzola and Parmesan cheese, allowing them to melt into the cream. If the sauce is too thick, gradually add some reserved pasta water until you reach the desired consistency. Sprinkle in the Italian seasoning, and season with more salt and pepper if needed.

Combine: Toss the cooked fettuccine in the creamy cheese sauce until coated evenly. If desired, add fresh spinach and cherry tomatoes at this point for extra flavor and color.

Serve: Plate the pasta and top with the sliced steak. Garnish with fresh parsley and additional crumbled Gorgonzola if preferred.

Enjoy: Serve immediately, and savor the rich combination of flavors!
