8 lamb chops (about 1 inch thick)

2 tablespoons fresh rosemary, chopped

4 cloves garlic, minced

3 tablespoons honey

1 tablespoon Dijon mustard

2 tablespoons olive oil

Salt and pepper to taste

Juice of 1 lemon

1 teaspoon crushed red pepper flakes (optional)

Fresh rosemary sprigs for garnish

Instructions
 

Marinate the Lamb Chops: In a large bowl, combine the chopped rosemary, minced garlic, honey, Dijon mustard, olive oil, lemon juice, salt, pepper, and crushed red pepper flakes (if using). Mix well to create a marinade.

    Prepare the Chops: Add the lamb chops to the marinade, making sure they are fully coated. Cover the bowl and refrigerate for at least 1 hour, preferably overnight for enhanced flavor.

      Preheat the Grill or Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C).

        Grill or Roast the Lamb Chops:

          - If grilling, place the chops on the grill and cook for about 4 to 5 minutes on each side for medium-rare, adjusting the time based on your preferred doneness.

            - If roasting, place the marinated lamb chops on a baking sheet and roast in the oven for about 15-20 minutes, flipping halfway through.

              Rest the Chops: Once done, remove the lamb chops from the grill or oven and let them rest for about 5 minutes to allow the juices to redistribute.

                Serve: Plate the lamb chops and drizzle any remaining marinade over them. Garnish with fresh rosemary sprigs for a beautiful presentation.
