Ingredients

1 whole chicken (about 4-5 lbs)

1 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

2 tablespoons fresh sage, chopped

1 lemon, zested and quartered

1 onion, quartered

Salt and pepper, to taste

1 tablespoon olive oil

2 cups low-sodium chicken broth

Fresh herbs for garnish (optional)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C).

Prepare the Herb Butter: In a mixing bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, sage, lemon zest, and a generous pinch of salt and pepper. Mix until well combined.

Prepare the Chicken: Pat the chicken dry with paper towels. Gently loosen the skin over the chicken breast and thighs using your fingers, being careful not to tear it.

Apply the Butter: Take about two-thirds of the herb butter mixture and spread it evenly under the skin, massaging it gently to ensure it covers the meat well. Rub any remaining herb butter all over the outside of the chicken.

Stuff the Chicken: Place the quartered lemon and onion inside the cavity of the chicken. This will add flavor and moisture during roasting.

Season the Chicken: Drizzle olive oil over the chicken’s surface and sprinkle with salt and pepper. This will help create a crispy skin.

Roast the Chicken: Place the chicken breast-side up in a roasting pan. Pour the chicken broth into the bottom of the pan to keep the chicken moist during roasting.

Cook: Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (75°C) and the skin is golden brown and crispy. Baste the chicken with the pan juices halfway through cooking to enhance moisture and flavor.

Rest the Chicken: Remove the chicken from the oven and let it rest for at least 15 minutes before carving. This allows the juices to redistribute, making for a juicier chicken.

Serve: Carve the chicken and serve it warm, garnished with fresh herbs if desired. Enjoy the savory, buttery flavor with your favorite sides!
