1.5 pounds baby potatoes (preferably mixed colors)

4 tablespoons olive oil

6 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Potatoes: Start by washing the baby potatoes thoroughly and pat them dry. If some potatoes are larger, cut them in half to ensure even cooking.

    Boil the Potatoes: In a large pot, add the baby potatoes and cover with water. Bring to a boil over medium heat, then add a generous pinch of salt. Reduce heat and let simmer for about 15-20 minutes until the potatoes are fork-tender. Drain and set aside.

      Make the Garlic Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

        Cream It Up: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the Parmesan cheese, dried thyme, and smoked paprika. Season with salt and pepper to taste. Let the sauce simmer for about 3-4 minutes until it thickens slightly.

          Combine: Add the boiled baby potatoes to the skillet and gently toss them in the creamy garlic sauce until well-coated. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
