Ingredients
  

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 cup uncooked white rice

2 cups beef broth

1 cup diced tomatoes (canned or fresh)

1 cup corn (frozen or canned, drained)

1 tsp chili powder

1 tsp paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

1 cup sour cream

1/2 cup green onions, chopped (for garnish)

Optional: crushed tortilla chips for topping

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain excess fat if necessary.

      Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.

        Stir in the uncooked rice, beef broth, diced tomatoes, corn, chili powder, paprika, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Let simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed, stirring occasionally.

          Once the rice is cooked, remove from heat and stir in the sour cream and 1 cup of shredded cheddar cheese until well blended.

            Transfer the mixture into a greased 9x13-inch casserole dish. Spread evenly.

              Top the casserole with the remaining 1 cup of cheddar cheese, and sprinkle optionally with crushed tortilla chips for added crunch.

                Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and allow to cool slightly. Garnish with chopped green onions before serving.
