Ingredients

1 pound beef tenderloin, trimmed and cut into small cubes

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 French baguette, sliced into 1/2 inch thick rounds

2 tablespoons butter

2 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

2 tablespoons chopped fresh parsley, for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Crostini: Place the sliced baguette on a baking sheet. Brush lightly with olive oil and season with salt. Bake for about 8-10 minutes, or until golden brown and crispy. Remove from the oven and set aside.

Sear the Beef: In a skillet over medium-high heat, add the olive oil. Once hot, season the beef cubes with salt and pepper, then add them to the skillet. Sear for 2-3 minutes until browned and cooked to your desired level of doneness. Remove from heat and let rest for a few minutes.

Make the Parmesan Cream Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds, or until fragrant. Pour in the heavy cream and bring to a simmer. Gradually whisk in the Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper to taste. Remove from the heat.

Assemble the Crostini: On each toasted piece of baguette, place a few pieces of the seared beef. Drizzle generously with the Parmesan cream sauce.

Garnish and Serve: Sprinkle chopped fresh parsley on top for color and freshness. Serve the crostini warm as an elegant appetizer.
