1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

4 cups chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

8 ounces cheese tortellini (fresh or frozen)

2 cups fresh spinach or kale, roughly chopped

Grated Parmesan cheese (for serving)

Fresh parsley or basil (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat if needed.

    Stir in the diced onion, garlic, carrots, and celery. Sauté until the vegetables are tender, approximately 5-8 minutes.

      Pour in the chicken broth and add the diced tomatoes (with their juice) to the pot. Stir in the oregano, basil, salt, and pepper.

        Bring the soup to a gentle boil, then reduce the heat to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.

          Add the tortellini to the soup and cook according to the package instructions (usually about 3-5 minutes).

            Once the tortellini is cooked, stir in the chopped spinach or kale until wilted, about 2-3 minutes.

              Taste and adjust the seasoning if necessary. Serve hot, topped with grated Parmesan cheese and fresh parsley or basil for garnish.
