Sausage, Rotel & Cream Cheese Crescent Rolls

1 pound breakfast sausage (mild or spicy, according to preference)

1 (10 oz) can of Rotel tomatoes with green chilies, drained

8 oz cream cheese, softened

1 tablespoon of taco seasoning (optional, for extra flavor)

2 cans (8 oz each) refrigerated crescent roll dough

1 cup shredded cheddar cheese

1 tablespoon chopped fresh cilantro (optional, for garnish)

Cooking spray or parchment paper for baking

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly spray it with cooking spray.

    Prepare the Sausage Filling: In a medium skillet over medium heat, add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spatula as it cooks. Drain excess grease if necessary.

      Mix the Filling: Reduce the heat to low. Add the softened cream cheese to the cooked sausage in the skillet. Stir until the cream cheese is fully melted and combined. Then, mix in the drained Rotel tomatoes and taco seasoning if using. Cook until everything is well combined and heated through, about 3-4 minutes. Remove from heat and let cool slightly.

        Prepare the Crescent Rolls: Unroll the crescent roll dough and separate it into triangles. You should have 16 triangles from the two cans.

          Fill the Rolls: Spoon a generous amount of the sausage mixture onto the wide end of each triangle. Sprinkle a little shredded cheddar cheese on top if desired.

            Roll Them Up: Starting from the wide end, roll up the crescent roll, wrapping the filling inside, and place them seam-side down on the prepared baking sheet.

              Bake: Bake in the preheated oven for 12-15 minutes, or until the rolls are golden brown and puffed.

                Serve: Once baked, remove from the oven and let cool for a couple of minutes. Garnish with fresh chopped cilantro if desired and serve hot.
