1 lb smoked sausage (kielbasa or your choice), sliced into rounds

4 medium potatoes, peeled and diced

1 small head of green cabbage, chopped

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

2 cups water

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Heat Oil: In a large pot, heat the olive oil over medium heat. Add the sliced sausage and sauté until browned, about 5 minutes.

    Sauté Veggies: Add the chopped onion, garlic, carrots, and celery to the pot. Cook, stirring occasionally, for about 4-5 minutes until the vegetables begin to soften.

      Add Broth and Potatoes: Pour in the chicken broth and water, then add the diced potatoes. Bring the mixture to a boil.

        May the Cabbage In: Once boiling, stir in the chopped cabbage, paprika, thyme, salt, and pepper. Reduce the heat to low and let simmer for about 25-30 minutes, or until the potatoes are tender.

          Taste & Adjust: Taste the soup and adjust seasoning if needed. If you prefer a richer flavor, let it simmer a bit longer.

            Serve: Ladle the soup into bowls, and garnish with fresh parsley before serving.
