Ingredients
  

1 lb (450g) Italian sausage (mild or spicy, your choice)

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 red bell pepper, diced

1 yellow onion, chopped

3 tablespoons olive oil

Salt and pepper to taste

4 cloves garlic, minced

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, toss the diced sweet potatoes, sausage (cut into bite-sized pieces), red bell pepper, and onion with olive oil, salt, and pepper until well combined.

      Spread the mixture in a single layer on a large baking sheet. Bake for 25-30 minutes, stirring halfway through, until sweet potatoes are tender and sausage is browned.

        Meanwhile, in a small saucepan, combine the minced garlic, honey, soy sauce, apple cider vinegar, and smoked paprika. Cook over medium heat for about 5 minutes, stirring frequently, until the sauce thickens slightly. Remove from heat and set aside.

          Once the sausage and sweet potatoes are done roasting, remove from the oven and drizzle the honey garlic sauce over the hot mixture. Toss to combine everything well.

            Serve warm, garnished with fresh chopped parsley.
