Ingredients
  

For the Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the Apple Filling:

3 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

½ cup brown sugar

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

¾ cup sour cream

2 large eggs

1 teaspoon vanilla extract

For the Salted Caramel Sauce:

1 cup granulated sugar

6 tbsp unsalted butter

½ cup heavy cream

1 teaspoon salt (or to taste)

For Garnish (optional):

Whipped cream

Extra salted caramel sauce

Diced apples

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.

          Make the Apple Filling:

            - In a large bowl, toss the diced apples with brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Let sit for about 10 minutes.

              - Cook the apple mixture in a skillet over medium heat for about 5-7 minutes until slightly softened. Remove from heat and allow to cool.

                Prepare the Cheesecake Filling:

                  - In a large mixing bowl, beat the softened cream cheese until smooth.

                    - Gradually add in granulated sugar, beating until combined and fluffy.

                      - Mix in sour cream, then add eggs one at a time, mixing well after each addition. Finally, blend in the vanilla extract.

                        Assemble the Cheesecake:

                          - Pour half of the cheesecake filling into the cooled crust. Spread evenly.

                            - Add the apple filling on top and then pour the remaining cheesecake filling over the apples. Smooth with a spatula.

                              Bake the Cheesecake:

                                - Bake in the preheated oven for 55-60 minutes or until the center is set but slightly jiggly. Turn off the oven and crack the door, allowing the cheesecake to cool for 1 hour.

                                  - Remove the cheesecake from the oven and refrigerate for at least 4 hours, preferably overnight.

                                    Make the Salted Caramel Sauce:

                                      - In a medium saucepan, heat the granulated sugar over medium heat, stirring constantly until it melts and turns a golden amber color.

                                        - Remove from heat, then carefully whisk in the butter until melted. Slowly pour in the heavy cream and stir until combined. Add salt to taste, then set aside to cool.

                                          Serve:

                                            - Once the cheesecake is fully chilled, remove from the springform pan.

                                              - Drizzle with salted caramel sauce before serving. Garnish with whipped cream and additional diced apples if desired.
