1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup butterscotch chips

Flaky sea salt, for sprinkling

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

      Beat in the eggs, one at a time, followed by the vanilla extract, mixing until well incorporated.

        In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

            Fold in the butterscotch chips, ensuring they are evenly distributed throughout the dough.

              Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

                Before baking, sprinkle a tiny pinch of flaky sea salt on each cookie dough ball.
