1 cup honey

1 cup granulated sugar

1 cup unsalted butter (softened)

3 large eggs

3 teaspoons baking soda

4 cups all-purpose flour

1 teaspoon vanilla extract

1/2 teaspoon salt

2 cups sour cream

1 cup powdered sugar

1 teaspoon lemon juice

Optional: chopped walnuts or almonds for garnish

Prepare the Honey Cake Batter:

    - In a medium saucepan, combine honey, granulated sugar, and butter. Cook over low heat, stirring until the sugar is dissolved and the butter is melted. Remove from heat and let it cool slightly.

          Add Dry Ingredients:

            - Gradually add the flour and salt, mixing until you have a soft dough. It may be slightly sticky; if too sticky, add a little more flour.

              Divide and Roll:

                - Divide the dough into 6-8 equal portions. Roll each portion out on a floured surface until very thin (about 1/8 inch thick). Use a circular cutter or a knife to trim them into even circles.

                  Bake the Cake Layers:

                    - Preheat your oven to 350°F (175°C). Place each rolled-out layer on a parchment-lined baking sheet. Bake for about 5-7 minutes or until the edges are just golden. Let them cool completely.

                      Prepare the Cream Filling:

                        - In a separate bowl, beat the sour cream, powdered sugar, and lemon juice until smooth and creamy. This will be your frosting between layers.

                          Assemble the Cake:

                            - Take one layer of cake and spread a generous amount of the cream filling on top. Place another layer on top, add more filling, and repeat until all layers are assembled. Spread any remaining cream on the top and sides of the cake.
