Ingredients
  

12 oz pasta of your choice (penne or rotini work well)

1 can (10 oz) Rotel diced tomatoes with green chilies

1 lb ground beef or turkey

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 tsp cumin

1 tsp chili powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 cup sour cream

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet over medium heat, add the ground beef (or turkey). Cook until browned, about 5-7 minutes. Drain excess fat.

      Sauté Vegetables: Add diced onion, bell pepper, and garlic to the skillet. Sauté for about 5 minutes, until the vegetables are tender.

        Season: Stir in cumin, chili powder, smoked paprika, salt, and pepper. Add the can of Rotel (with juices) to the skillet, and stir well to combine. Allow to simmer for about 3-4 minutes to let the flavors meld.

          Combine: Add the cooked pasta to the skillet and mix until well coated with the sauce. Fold in the sour cream and half of the shredded cheddar cheese. Stir until heated through.

            Serve: Remove from heat, and sprinkle the remaining cheese on top. Allow to melt slightly before serving. Garnish with fresh cilantro if desired.
