Rotel Pasta Fiesta -

Ingredients
  

12 ounces pasta of your choice (penne, rotini, or bowtie)

1 can (10 ounces) diced tomatoes with green chilies (Rotel)

1 can (15 ounces) black beans, drained and rinsed

1 cup corn, frozen or canned

1 cup diced bell peppers (red and green)

1 medium onion, chopped

2 cloves garlic, minced

2 cups shredded cheddar cheese

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon olive oil

Fresh cilantro, chopped, for garnish

Sour cream or Greek yogurt (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the onion and bell peppers; sauté until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add Remaining Ingredients: Add the cooked pasta to the skillet along with the diced tomatoes with their juices, black beans, corn, chili powder, cumin, salt, and black pepper. Mix everything well and cook for 5-7 minutes, allowing the flavors to meld together.

        Cheesy Finish: Lower the heat and sprinkle the shredded cheddar cheese over the pasta mixture. Cover the skillet and let it cook for another 2-3 minutes until the cheese is melted and bubbly.

          Garnish and Serve: Remove from heat, and garnish with chopped cilantro. Serve hot with a dollop of sour cream or Greek yogurt on top if desired.
