Rosemary Sea Salt Soft Pretzels

1 ½ cups warm water (110°F to 115°F)

2 ¼ teaspoons active dry yeast (1 packet)

1 tablespoon granulated sugar

4 cups all-purpose flour, plus more for dusting

2 teaspoons sea salt

1 tablespoon fresh rosemary, finely chopped

½ cup baking soda

1 egg, beaten (for egg wash)

Flaky sea salt, for sprinkling

Activate Yeast: In a large bowl, combine the warm water, yeast, and granulated sugar. Stir gently and let it sit for about 5-10 minutes until frothy.

    Make Dough: In a separate bowl, mix together 4 cups of flour, sea salt, and chopped rosemary. Once the yeast is activated, pour the yeast mixture into the dry ingredients. Stir until a rough dough forms.

      Knead the Dough: Lightly flour a clean surface and transfer the dough onto it. Knead for about 5-7 minutes until the dough is smooth and elastic. If the dough is sticky, add a little more flour as needed.

        First Rise: Place the kneaded dough in a lightly greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

          Shape Pretzels: Preheat your oven to 450°F (232°C). In a medium pot, bring 10 cups of water to a boil and add the baking soda. Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 24 inches) and shape it into a pretzel.

            Boil Pretzels: Carefully drop each pretzel into the boiling water for about 30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.

              Egg Wash & Season: Brush each pretzel with the beaten egg and sprinkle with flaky sea salt.

                Bake: Bake in the preheated oven for 10-12 minutes or until golden brown.
