12 fresh figs, halved

1 tablespoon balsamic vinegar

1 tablespoon olive oil

1 French baguette, sliced into 1/2-inch pieces

5 ounces goat cheese, softened

2 tablespoons honey

1 teaspoon fresh thyme leaves

Salt and pepper, to taste

Arugula or fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Figs: In a mixing bowl, combine the halved figs with the balsamic vinegar, olive oil, salt, and pepper. Toss gently to coat the figs evenly.

      Roast the Figs: Spread the figs on a baking sheet, cut side up, and roast in the preheated oven for about 15-20 minutes, or until they are caramelized and tender.

        Toast the Baguette: While the figs are roasting, arrange the baguette slices on a separate baking sheet. Brush each slice lightly with olive oil, then toast in the oven for about 8-10 minutes, or until they are golden and crisp.

          Prepare the Goat Cheese Mixture: In a small bowl, mix the softened goat cheese with honey and fresh thyme. Add a pinch of salt and pepper to taste, and stir until well combined.

            Assemble the Crostini: Once the figs are roasted and the baguette slices are toasted, spread a generous layer of the goat cheese mixture on each toasted crostini. Top each one with a roasted fig and drizzle with a little extra honey if desired.
