Ingredients

3 cups Rice Krispies cereal

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1/2 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup mini marshmallows (optional for extra chewiness)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Mix Dry Ingredients: In a mixing bowl, combine the flour, baking powder, and salt. Set aside.

Cream Butter and Sugars: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and well combined.

Add Egg and Vanilla: Beat in the egg and vanilla extract until fully incorporated.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.

Fold in Rice Krispies and Chocolate Chips: Gently fold in the Rice Krispies, chocolate chips, and mini marshmallows (if using) until evenly distributed.

Form Cookies: Using a tablespoon or cookie scoop, drop mounds of the dough onto the prepared baking sheet, making sure to leave space between each mound (they will spread slightly).

Bake: Bake in the preheated oven for 10-12 minutes, or until the edges start to golden. The centers may look a bit soft, but they will firm up as they cool.

Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Serve and delight in your crunchy, chewy, and chocolatey treats!
