Reuben Balls with Spicy Thousand Island Dipping Sauce

Ingredients
  

For the Reuben Balls:

1 cup corned beef, finely chopped

1 cup sauerkraut, drained and squeezed dry

1 cup Swiss cheese, shredded

1/2 cup panko breadcrumbs

1/4 cup mayonnaise

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

Oil, for frying

For the Spicy Thousand Island Dipping Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp apple cider vinegar

1 tbsp finely chopped pickles or relish

1 tsp hot sauce (adjust to taste)

Salt and pepper, to taste

Instructions
 

Prepare the Filling:

    - In a large mixing bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, panko breadcrumbs, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.

      Form the Balls:

        - Use your hands to scoop out about 2 tablespoons of the mixture and roll it into a ball. Repeat until all the mixture is used, placing the balls on a baking sheet lined with parchment paper.

          Chill:

            - Refrigerate the formed balls for about 30 minutes to help them firm up, which makes them easier to fry.

              Fry the Reuben Balls:

                - In a deep skillet, heat oil over medium heat (about 350°F/175°C). Fry the balls in batches, ensuring not to overcrowd the pan. Cook them for about 3-4 minutes on each side, or until golden brown and crispy.

                  - Use a slotted spoon to transfer the fried balls to a paper towel-lined plate to drain excess oil.

                    Make the Dipping Sauce:

                      - In a small bowl, whisk together the mayonnaise, ketchup, apple cider vinegar, chopped pickles, hot sauce, salt, and pepper until smooth. Adjust seasoning to taste.

                        Serve:

                          - Serve the crunchy Reuben balls hot, alongside the spicy Thousand Island dipping sauce for a delightful twist on a classic delicacy. Enjoy!
