Ingredients
  

2 large cucumbers, diced

3 medium tomatoes, chopped

1 small red onion, thinly sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon lemon juice

Salt and pepper to taste

1/2 teaspoon dried oregano (optional)

Instructions
 

Start by washing the cucumbers and tomatoes under cold water. Dice the cucumbers and chop the tomatoes into bite-sized pieces. Place them in a large mixing bowl.

    Thinly slice the red onion and add it to the bowl with the cucumbers and tomatoes.

      Chop the fresh parsley and sprinkle it over the salad mixture. If you're using feta cheese, add the crumbled cheese at this stage.

        In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, salt, pepper, and dried oregano (if using) until well combined.

          Drizzle the dressing over the salad and toss gently to coat all ingredients.

            Let the salad sit for about 10 minutes to allow the flavors to meld.

              Serve chilled or at room temperature.
