Ravioli with Tomatoes, Asparagus, Garlic, and Herbs

Ingredients
  

1 package of fresh or frozen ravioli (your choice of filling)

2 cups cherry tomatoes, halved

1 bunch of asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon dried oregano

1 teaspoon fresh basil, chopped (or ½ teaspoon dried)

1 teaspoon fresh parsley, chopped (or ½ teaspoon dried)

Grated Parmesan cheese, for serving

Instructions
 

Preheat the oven: Preheat your oven to 425°F (220°C).

    Prepare the vegetables: On a large baking sheet, combine the halved cherry tomatoes and asparagus pieces. Drizzle with 2 tablespoons of olive oil and season with salt, pepper, minced garlic, dried oregano, and basil. Toss to coat evenly.

      Roast the vegetables: Spread the vegetables in a single layer and roast in the preheated oven for about 15-20 minutes, or until the tomatoes are blistered and the asparagus is tender.

        Cook the ravioli: While the vegetables are roasting, bring a large pot of salted water to a boil. Add the ravioli and cook according to package instructions (usually around 3-5 minutes for fresh ravioli or 7-10 minutes for frozen). Once cooked, drain and set aside, reserving a small cup of pasta cooking water.

          Combine: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the cooked ravioli, roasted vegetables, and a splash of the reserved pasta water. Gently toss everything together to coat the ravioli. Sauté for an additional 2-3 minutes on low heat to heat through.

            Season and serve: Taste and adjust seasoning with more salt, pepper, or herbs if needed. Serve immediately, garnished with fresh parsley and grated Parmesan cheese.
