Ingredients

1 cup unsalted butter, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup raspberry jam

¼ cup fresh raspberries, crushed

Powdered sugar for dusting (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, mixing well after each addition.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.

Prepare Raspberry Swirl: In a small bowl, combine the raspberry jam with the crushed raspberries. Stir gently to create a swirl effect, taking care not to fully blend.

Create Cookie Dough: Using a tablespoon, scoop some cookie dough and roll it into a ball. Place on the prepared baking sheet and flatten slightly.

Add Raspberry Swirl: Use a small teaspoon to place a dollop of the raspberry mixture on top of each cookie, then use a toothpick or a skewer to swirl it into the dough lightly.

Bake the Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly soft; they'll firm up as they cool.

Cool and Dust: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely. Just before serving, dust with powdered sugar if desired.
