1 tsp baking powder

½ tsp baking soda

¼ tsp salt

¾ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

½ cup raspberry puree (fresh or frozen raspberries blended until smooth, strained to remove seeds)

1/2 cup confectioners' sugar (for dusting)

Fresh raspberries (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together using a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.

        Add Egg and Vanilla: Beat in the egg and vanilla extract until well combined.

          Incorporate Raspberry Puree: Gently mix in the raspberry puree until evenly combined. The dough should be a delightful pastel pink.

            Combine Wet and Dry Ingredients: Gradually add the dry ingredient mixture to the wet mixture, mixing on low speed until just combined. Do not overmix.

              Scoop Dough: Using a cookie scoop or tablespoon, portion out the dough and place them on the prepared baking sheets about 2 inches apart.

                Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly browned, and the centers are still soft. They will firm up as they cool.
