Raspberry Oatmeal Crumble Bars

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1/2 teaspoon baking powder

1/2 cup brown sugar, packed

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easier removal.

    Prepare the Raspberry Filling: In a medium saucepan over medium heat, combine the raspberries, granulated sugar, lemon juice, and cornstarch. Cook for 5-7 minutes, gently stirring, until the raspberries soften and the mixture begins to thicken. Remove from heat and let cool slightly.

      Make the Oatmeal Crumble Base: In a large mixing bowl, whisk together the rolled oats, flour, baking powder, salt, and brown sugar. Pour in the melted butter and vanilla extract. Mix with a fork until the mixture is crumbly but holds together when pressed.
