Raspberry Chocolate Lava Cake

1 cup dark chocolate chips (at least 70% cacao)

½ cup unsalted butter

1 cup powdered sugar

2 large eggs

2 large egg yolks

1 teaspoon vanilla extract

½ cup all-purpose flour

½ teaspoon salt

½ cup fresh raspberries (plus extra for garnish)

Cocoa powder (for dusting)

Whipped cream or vanilla ice cream (for serving)

Instructions
 

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder, shaking out the excess.

    In a heatproof bowl over simmering water (double boiler method), combine the dark chocolate chips and unsalted butter. Stir until melted and smooth. Remove from heat and let it cool slightly.

      In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined.

        Slowly add the melted chocolate mixture to the egg mixture, stirring continuously until fully incorporated.

          Gently fold in the all-purpose flour and salt until just combined. Be careful not to overmix to maintain the fudgy texture.

            Divide half of the batter evenly among the ramekins. Place a few fresh raspberries in the center of each ramekin, then top with the remaining batter, filling each ramekin about three-quarters full.

              Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are firm but the center is soft. The tops may appear slightly undercooked.

                Remove from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen, then invert each ramekin onto a plate.

                  Allow the lava cakes to sit for about 30 seconds before removing the ramekin to let the melted chocolate center flow out.

                    Garnish with fresh raspberries and a dollop of whipped cream or a scoop of vanilla ice cream. Serve warm and enjoy your decadent treat!
