Raspberry Chocolate Chip Cookies

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup semisweet chocolate chips

1 cup fresh raspberries

1/2 cup chopped walnuts (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.

      Add Eggs and Vanilla: Beat in the eggs one at a time, followed by the vanilla extract. Mix until well combined.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.

          Fold in Chocolate Chips and Raspberries: Gently fold in the semisweet chocolate chips and fresh raspberries. If you’re using walnuts, fold them in at this stage too. Be careful not to overmix to avoid breaking the raspberries.

            Scoop the Dough: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie to allow for spreading.

              Bake: Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked. They will continue to cook on the baking sheet after being removed from the oven.
