Ingredients
  

1 cup fresh raspberries (plus extra for garnish)

1 tablespoon sugar (for raspberries)

1 ½ cups cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream (store-bought or homemade)

1 cup graham cracker crumbs

4 tablespoons unsalted butter, melted

1 tablespoon lemon zest

Mint leaves for garnish (optional)

Instructions
 

Prepare the Raspberry Sauce: In a small bowl, combine the fresh raspberries and 1 tablespoon of sugar. Gently mash the raspberries with a fork and set aside for about 10 minutes to create a sauce.

    Make the Cheesecake Mixture: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar and continue to mix until fully combined. Stir in the vanilla extract and lemon zest. Gently fold in the whipped cream until the mixture is light and airy.

      Prepare the Crust: In a separate bowl, mix the graham cracker crumbs with the melted butter until the crumbs are evenly coated.

        Assemble the Parfaits: In individual serving glasses or parfait cups, layer the ingredients as follows:

          - Start with a layer of graham cracker crust (about two tablespoons).

            - Add a layer of the cheesecake mixture (about three tablespoons).

              - Spoon in a layer of the raspberry sauce (about two tablespoons).

                - Repeat the layers until the glasses are full, finishing with a layer of cheesecake mixture.

                  Chill and Serve: Refrigerate the parfaits for at least 2 hours to set the layers. Before serving, top with additional fresh raspberries and mint leaves for garnish.
