Raspberry Cheesecake French Toast Casserole

A delightful twist on a classic dish.

Ingredients

1 loaf of brioche bread (about 12 slices), cut into cubes

8 oz cream cheese, softened

1 cup fresh raspberries (or frozen, thawed and drained)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

3/4 cup granulated sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 cup powdered sugar (for garnish)

Maple syrup (for serving)

Instructions

Prepare the Bread: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish. Distribute the bread cubes evenly in the dish.

Make the Cream Cheese Mixture: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add in the granulated sugar, vanilla extract, and ground cinnamon, mixing until creamy and well combined. Gently fold in the raspberries.

Combine Wet Ingredients: In another bowl, whisk together the eggs, whole milk, and heavy cream until fully incorporated. Gradually add this mixture to the bread cubes, ensuring they soak thoroughly.

Assemble the Casserole: Pour the cream cheese mixture over the soaked bread cubes, making sure to spread it evenly. Use a spatula to gently press down the bread so it absorbs the cream cheese mixture.

Bake: Cover the baking dish with foil and bake for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the custard is set.

Cool and Serve: Allow the casserole to cool for about 10 minutes before serving. Dust with powdered sugar for garnish and drizzle with maple syrup as desired. Enjoy your delicious Raspberry Cheesecake French Toast Casserole!
