Ingredients

4 large egg whites (room temperature)

1 cup granulated sugar

1 teaspoon vanilla extract

1/4 teaspoon cream of tartar

A few drops of food coloring (red, blue, green, yellow, purple)

Cotton candy (for garnish)

Edible glitter (optional, for added sparkle)

Instructions

Preheat the Oven: Preheat your oven to 225°F (110°C). Line a baking sheet with parchment paper or a silicone baking mat.

Whip the Egg Whites: In a clean, dry mixing bowl, combine the egg whites and cream of tartar. Using an electric mixer, beat on medium speed until soft peaks form.

Slowly Add Sugar: Gradually add the granulated sugar, about a tablespoon at a time. Continue beating on high speed until the mixture becomes glossy and stiff peaks form, about 5-7 minutes.

Add Vanilla: Gently fold in the vanilla extract until combined.

Divide and Color: Divide the meringue into five separate bowls. Using your chosen food coloring, color each bowl of meringue a different hue of the rainbow. Be sure to mix well to achieve vibrancy.

Marble the Colors: Using a piping bag fitted with a large round or star tip, layer the colored meringues in the bag. Start with the red, then add orange, yellow, green, blue, and finish with purple for a beautiful marbled effect.

Pipe the Meringues: Pipe 1.5-inch dollops of the meringue onto the prepared baking sheet, leaving space between each one to allow for expansion.

Bake Slowly: Bake in the preheated oven for about 1.5 to 2 hours or until the meringues are dry to the touch. They should easily lift off the parchment and should not be chewy.

Cool Completely: Turn off the oven and let the meringues cool in the oven with the door slightly ajar for at least 30 minutes to an hour.

Garnish: Once cool, top each meringue with a small tuft of cotton candy and sprinkle with edible glitter, if desired.

Serve: Arrange your rainbow meringues on a colorful tray or stand, and get ready to wow your guests with this stunning treat!
