2 cans (14 oz each) of diced tomatoes

1 medium onion, chopped

3 cloves garlic, minced

2 cups vegetable broth

1/2 cup heavy cream (or coconut cream for a vegan option)

1/4 cup fresh basil, chopped (or 1 tbsp dried basil)

1 tablespoon olive oil

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

Instructions
 

Prepare the Slow Cooker: In the slow cooker, add the chopped onions and garlic, followed by the diced tomatoes (with juice) and vegetable broth.

    Add Seasoning: Stir in the sugar (if using), salt, and pepper. Drizzle in the olive oil and mix well.

      Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours until the onions are soft and the flavors meld together.

        Blend: Using an immersion blender, carefully blend the soup until smooth. You can also transfer to a regular blender in batches if needed.

          Finish with Cream and Basil: Stir in the heavy cream and fresh basil. Allow to heat through on low for an additional 10-15 minutes.

            Serve: Ladle into bowls and garnish with extra basil if desired. Enjoy with crusty bread!
