1 lb boneless, skinless chicken breasts (sliced thinly)

2 tablespoons vegetable oil (divided)

2 cups mixed bell peppers (sliced, any colors)

1 cup broccoli florets

1 cup snap peas

3 cloves garlic (minced)

1 teaspoon fresh ginger (grated)

1/4 cup soy sauce (low sodium)

1 tablespoon oyster sauce (optional)

1 tablespoon honey or brown sugar

1 teaspoon rice vinegar

1 teaspoon cornstarch (mixed with 2 tablespoons water)

Cooked rice or noodles (for serving)

Sesame seeds (for garnish)

Green onions (sliced, for garnish)

Instructions
 

Prepare the Sauce: In a bowl, whisk together the soy sauce, oyster sauce (if using), honey or brown sugar, rice vinegar, and the cornstarch slurry until well combined. Set aside.

    Cook the Chicken: In a large skillet or wok over medium-high heat, add 1 tablespoon of vegetable oil. Once hot, add the sliced chicken and stir-fry for about 5-7 minutes until the chicken is cooked through and lightly browned. Remove the chicken from the skillet and set aside.

      Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant. Then, add the bell peppers, broccoli, and snap peas. Stir-fry the vegetables for about 3-4 minutes until they are vibrant and slightly tender.

        Combine and Coat: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables, stirring well to coat everything. Cook for another 2-3 minutes until the sauce thickens and everything is heated through.

          Serve: Remove from heat and serve hot over cooked rice or noodles. Garnish with sesame seeds and sliced green onions for added flavor and crunch.
