8 oz spaghetti or linguine pasta

1 lb medium shrimp, peeled and deveined

4 tablespoons olive oil

4 cloves garlic, minced

Zest and juice of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

½ cup cherry tomatoes, halved

¼ cup fresh parsley, chopped

Salt and black pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

Cook the pasta: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve ½ cup of the pasta water, then drain the rest and set aside.

    Sauté the shrimp: In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the shrimp in a single layer and season with salt and black pepper. Cook for 2-3 minutes until they turn pink and opaque. Remove shrimp from the skillet and set aside.

      Infuse the oil: In the same skillet, add the remaining 2 tablespoons of olive oil. Add minced garlic and red pepper flakes, sautéing for about 30 seconds until fragrant.

        Combine ingredients: Add the cherry tomatoes to the skillet and cook for another 2-3 minutes until they begin to soften. Then, return the cooked shrimp to the skillet. Stir in the lemon juice and zest, mixing well to combine.

          Finish the dish: Add the drained pasta and reserved pasta water to the skillet. Toss everything together until well coated, adjusting the consistency with more reserved pasta water if needed. Stir in chopped parsley and check for seasoning, adjusting with more salt or pepper as desired.

            Serve: Plate the pasta and shrimp, topping with grated Parmesan cheese and additional parsley if desired. Enjoy your quick, zesty dinner!
